Dream in cubes: tartar with truffles

Ingredients (as starter for 2 people.):

  • 200 g fillet of beef
  • 20 g shallots
  • 20 g pickled gherkins
  • 20 g pickled capers
  • 15 g truffle mayonnaise (see below)
  • 1 teaspoon (Dijon) mustard
  • Tabasco
  • Salt
  • Pepper

For the truffle mayonnaise:

  • 50 g mayonnaise
  • 5 g truffle oil
  • 5 g soy sauce
  • 5 g rice vinegar

For the decoration:

  • e.g. chives


Cut the beef fillet into small cubes, peel and dice the shallots. Dice the cucumber. Cut the capers into small pieces. Mix the mayonnaise with truffle oil, soy sauce and rice vinegar (apple vinegar or white wine vinegar is also good). Pour into a bowl with the other ingredients, mix everything together. Flavour with Dijon mustard, a dash of Tabasco, salt and ground pepper. Chives and crisps of purple potatoes are a good decoration.  You can also buy high quality chips. They go well with toast.Simply cut into thin slices, add a little olive oil and salt and roast lightly in the oven at 180 degrees.
